May 2008 – what a great month for vegans!
I was practically doing cartwheels last month. The celebrity endorsement of healthy, plant-based lifestyles was more than I dreamed possible.
Week of May 18th, Oprah had Kathy Freston, author of “Quantum Wellness: A Practical Guide to Health and Happiness” on her show, and decided to take the 21-day challenge offered by Kathy. To make it easy for Oprah, a professional chef is making her meals – all of them 100% plant-based. No meat, fish, poultry, dairy or eggs. Furthermore, as part of the cleanse, Oprah is also eliminating wheat. Her 21 days ends June 7. I am hoping she’ll stick to the lifestyle beyond the 21 days, but even if she doesn’t, she’s raised the health consciousness of millions of people around the world. And that is certainly a cause for celebration!
But wait, it gets better. Ellen Degeneres had Rory Freedman and Kim Banouin, authors of “Skinny Bitch” and “Skinny Bitch in the Kitch” on her show on May 23, followed by Kathy Freston on May 28th. All of these authors promote a 100% plant-based diet. With these mega stars demonstrating that a plant-based diet is healthy, nourishing and energizing, and destroying the myth of it being bland or boring, there’s reason to hope that more and more people will adopt this way of living. Which means the planet breathes easier, humans breathe easier and the animals are spared torture and abuse.

And, while I haven’t yet reached celebrity status, I’ll be representing the Toronto Vegetarian Association on a local cable show, “A Greener Toronto” on Rogers Cable 10. The host of the show will be interviewing me for the “Ask the Expert” segment on factory farming. Film date is June 10; air date will be week of June 30th. EASY Raw sunflower seed pâté
As the weather gets warmer, I eat more and more raw/living foods, leaving behind the heavier cooked foods I ate all winter. Th is is one of my favourites. It’s filling, nutritious, and tasty to the max!
2 cups sunflower seeds, soaked for 4 – 6 hours (drain and rinse well – discard soaking water)1 shredded cucumber (squeeze out excess water – I drink the cucumber juice – it's very cleansing)2 - 3 Tbsp fresh dill2 green onions, sliced1 lemon, juiced˝ tsp salt1 clove garlic (or more to taste)
Process all of the above using “S” blade of food processor (blender works too, but it’s easier with the food processor). If you want more texture, then only process the sunflower seeds with the seasonings, and then mix in the shredded cucumber with a fork or other utensil.
Spread a generous amount on green leaf or romaine lettuce, add slices of red pepper and tomato, roll up and eat like a burrito – YUM!.
